Now that my morning sickness/constant nausea is GONZO (woot woot), I have been on a breakfast making rampage. Since the glorious day the am sickness decided to hit the road, my early morning dreams have been all about food. Pretty strange because I have never had this before. I think it may be a combination of two things- genuine cravings and a lack of breakfast/brunch joints here on the North Shore of Oahu.
When we lived in San Diego, on the first day Brian had off, we would get up and enjoy some delish breakfast food (our go-to was the Original Pancake House aka OG's in Rancho Santa Fe.) This is one of the many things I have sincerely missed. So, in an attempt to bring myself a bit of joy, I set out to make my own breakfast food dreams come true.
On that very day, I sent Brian off to the store to pick me up all the things I would need to make myself some strawberry waffles with homemade whipped cream. Ladies and Gents... I'd have to say that it was a great success! Cravings and homesickness was definitely satisfied/relieved.

The Boy's Coconut French Toast Sticks
Stuffed French Toast
This is the first time I've tried this. I used the leftover whipped cream and infused it with some guava jam and layered sliced strawberries. It was oh-so delicious!!

And then this lovely lady mentioned that by adding some sort of white cheese like mozzarella, ricotta or the like to the jam, it was a traditional Brazilian treat called a "Romeo and Juliet." I tried it with mozzarella cheese the next time and it was a def hit.

I got the urge to make this after I saw a friend Jayme's Poached egg she made with avocado and spinach on toast.

So that's that. I'd also like to put out into the universe that someday, I'd like to buy a food truck and have my gourmet breakfast delights for all the North Shore-eans to enjoy. What'ya say universe? Go ahead and show me a sign!
